Delectable Cardamom Cookies
Makes about 2 dozen
Organic GF Flour, 2 1/4 cups
Baking Powder, 1 teaspoon
Pink (Himalayan) Salt, 1/2 teaspoon
Ghee, 3/4 cup room temperature or Coconut Oil
Organic Coconut Palm Sugar, 1 1/4 cups
Ground Cardamom, 4 teaspoons
Organic Free-range Eggs, 2 or 2 Tsp of egg replacer ( Orgran No Egg)
4 Tablespoons of Water
Vanilla Extract, 2 teaspoons
These tasty morsels don’t last long in my house so make double just to be safe.
Preheat oven to 175 Celsius. Line a baking sheet with Baking paper. In a medium bowl, whisk together flour, baking soda and salt. In a large bowl, cream together ghee and sugar until light and fluffy. Beat in cardamom, eggs and vanilla extract until well combined. With the mixer on low speed, gradually incorporate the flour mixture until the dough comes together and no streaks of dry ingredients remain. Shape dough into 2.5 cm balls and place on prepared baking sheet.
Bake for about 10 minutes, until cookies are set and very light golden around the edges. Allow to cool for 3-4 minutes on baking sheets, then remove to a wire rack to cool completely.
