Lara’s Autumn Tipi Pasta

Serves 4
1 can of Organic Chopped Tomatoes (Siena)
1 large Organic Purple Onion finely chopped
1 Clove Organic Russian Garlic finely chopped or crushed
4 Heaped Table spoons of Santos Italian Herb Mix
3 Heaped Tablespoons of Organic Ghee
2 Medium Organic zucchinis sliced and then chopped in half
1 large Organic Red Capsicum sliced lengthwise then chopped into 1 cm pieces
Half bunch of Organic Purple Kale de-stemmed torn into bite-sized pieces
1 generous pinch of Pink Himalayan Salt
Freshly ground Organic Black Pepper
500g of Santos Organic Rice and Quinoa Penne
Natural smoke from wood fire

Method

Fill a large pot with filtered water add a pinch of Pink Himalayan salt, bring to a boil, then add 500g of Penne, the pasta will take approximately 20 minutes to cook. Place Ghee or your choice of oil in a hot skillet, add your onions garlic and Italian Herb mix, cook until the onions are almost translucent, gently stirring them. Add the capsicum and zucchini stir and cook until they are lightly browned add your canned tomatoes and let mixture simmer for 5 minutes. At the very end throw in the kale and lightly cook for about 1 minute. When pasta is cooked drain off water then add pasta to the sauce.
