Serves 4-6
1 large head of organic cauliflower
2 large organic sweet potatoes
4 small to medium organic white sweet potato/purple on the inside!
1 large organic brown onion
1 clove of organic garlic (optional)
6 ripe organic tomatoes or 1 can of chopped tomatoes
5 cm longer piece of fresh organic ginger
3 large heaped tablespoons of organic Ghee or coconut oil
½ Tsp Black Mustard seeds
½ Tsp Cumin seeds
½ Tsp Ajwain seeds
1 Tsp turmeric powder
¼ Tsp Asafoetida
1 Tbsp of Yummy Lara Masala
1 to ½ tsp Himalayan Pink Salt
fresh cracked pepper to serve
Method
Prepare all your vegetable first, wash and chop in cube size the sweet potatoes, break off the cauliflower in to small florets. Finely dice the onion and garlic. Peel and finely chop the ginger. In a heavy based stainless steel saucepan on a medium to high heat add the ghee, let it heat up for a few minutes, ghee needs to be quite hot before adding your spices. First add you mustard seeds, cumin and ajwain once they start to pop add your diced onion and garlic. Sauté on a medium to low heat for at least 10 minutes or until they go a lovely clear color.
Then add the tomatoes, ginger, masala, turmeric , asafoetida and salt to mixture let simmer and cook for a further 5-7 minutes stirring mixture well. Add your sweet potatoes make sure they cook for a few minutes in the mixture before adding water to cover. Simmer for about 20 minutes or until potatoes start going soft, then add your cauliflower cover and cook for a further 5 -7 minutes. Serve with Rice or your choice of grain. Garnish with fresh coriander.
